Easy Fruit & Seed Oat Bars

Ingredients

150g jumbo oats

80g ground flaxseed

40g chia seeds

100g chopped dates (or raisins)

1 medium banana (mashed)

60g nut or seed butter (e.g. peanut, almond, sunflower)

1 apple (grated)

1 tsp cinnamon

Pinch of salt

80-100ml milk/plant milk (as needed)

Optional (for a higher protein bar) - add 30g hemp protein and 2 tbsp extra milk

Optional (for a bit of crunch) – replace 30g of flaxseed with 30g pumpkin/sunflower seeds


Method

1. Preheat oven to 160°C fan.

2. Combine the mashed banana, grated apple, nut butter, and chopped dates.

3. Combine the oats, ground flaxseed, chia seeds, cinnamon and salt.

4. Stir the dry ingredients into the wet mixture and add milk gradually until it forms a thick, sticky mixture.

5. Press the mixture firmly into a 20x20cm lined baking tray.

6. Bake for 25 minutes until set and browning at the edges.

7. Leave to cool completely before slicing. This mixture makes 12 large (approx. 50g) oat bars.

8. Store in an airtight container in the fridge for up to 4 days, or wrap individually in baking paper and freeze for up to 3 months (defrost in the fridge or at room temperature).
